Coconut sugar and Palm jaggery
Coconut sugar and Palm jaggery have a low glycemic content (35 and 42, respectively) [1] compared to sugarcane jaggery. Since both are a rich and better source of macro and micronutrients and antioxidants than cane sugar, they should be incorporated into our daily lives.
Excerpts from research articles:
1. While sucrose content is highest in sugarcane jaggery (84.40%), palm jaggery has the highest amount of
reducing sugar (12.41%) and protein (2.80%) [4].
2. It is a good source of calcium and vitamin C compared to Cane sugar [5].
3. Coconut sap has a pH of 5.52, which is less acidic than palm sap and sugarcane juice [1].
4. Coconut sap has a higher concentration of fructose and glucose and a lower concentration of sucrose than sugar palm and sugarcane juices [1].
5. Coconut sap contains more vitamins (C, B1, B3, B4, and B10) than sugar palm and sugarcane juices [1].
